I don't want to grow up

Since I've got some time I decided to post about my recent feelings toward growing up. You see, it's 11:30 am and I don't have to go to work until 1pm. Usually I would have slept until around 9 or so, taken my time to get ready and not leave my house until 12:50. But now that I'm in this so called adult world...the situation has changed.

Please don't make fun of me when I tell you where I just came home from. There is a younger group of ladies at church that have started what they call a "casserole club," and yes, I've just become a member. We had our first meeting this morning at 10 so I had to get up, look for all sorts of recipes so I could let them know what I'm going to make this month. It's sort of a neat idea, but I just can't grasp that I play bunco with a group of ladies each month, and now I'm a member of a casserole club. It's weird.

So if any of you out there have any good recipes for casseroles please send them my way, I don't want to be embarassed at the casserole clubs next cooking night. Thanks.

hey kat, i'm really proud of you for allowing yourself to be in fellowship with people who aren't around your age, either older or younger than you. i think that is a really hard thing to do, but I think you will be greatly blessed by it!

I pray that He will continue to sustain you with Him and the gifts He gives you, even casserole clubs. :) I love you--

Well I just read your comment and it made me want to see you!! I miss our talks. There is no talk like the one you and me have. I mean really. Anyway, CONGRATS on your new job at WBU!!! I'm glad you are getting to leave the bank, but thankful that you had that job. The people there will probably miss you. I am coming home Easter Weekend and I know you'll be in Dallas for LTC, but on Sunday maybe I can see you on my way back to Abilene. Anyway, we have lots to talk about! Love you, friend!!

Hey Kat, This is the very best. I promise it will be a hit!

Chicken Spaghetti:
Preheat oven to 350.
Boil 2-3 chicken breasts until cooked through.
Take the chicken out, but save the water.
Cool the chicken and cut it into small pieces, or shred it.
Boil spaghetti noodles in the water you used to boil the chicken-it will flavor the noodles a little bit.
In the casserole dish, mix together 1 can cream of chicken soup, 1 can rotel, and 1 can of either golden mushroom or cream of mushroom soup.
Mix in the chicken and cooked pasta. Stir it all together.
Top mixture with american cheese(like Kraft singles), and bake, covered for 30-45 minutes.

Hint: the last 5-10 minutes, take off the lid, and the cheese will become golden brown and yummy!

Serves 4-6
Serving suggestion: Serve with a simple garden salad and yummy toasted bread.
Suggested wine: Iced tea
